[52 Weeks]

Haven’t done one of these in a while. Got some cookbooks from the library and have been making a lot of delicious food using their recipes. Figured I’d share what I’ve been making the past two weeks.

[Sun] Corey cooked some taco “meat” (fake ground meat plus beans with taco seasoning)

[Mon] Rice and beans and a homemade salsa (totally made up recipes… came out really good!)

[Tue] Nacho cheese dip (from Vegan Lunchbox Around the World - my carnivorous husband loved this “cheese” recipe) plus tortilla chips (store bought… how embarrassing!) and “chili” (actually leftover rice and beans, but it worked well)

[Wed] Colcannon (from Vegan Lunchbox Around the World — basically mashed potatoes with kale and onions… so good. Even Asher loved it) and chili crusted po boys (from Veganomicon - I made everything in this recipe … french bread, cole slaw, chili crusted tofu and spicy mayo. Yum! Yet another huge hit.)

[Thur] Bahama Mama beans and rice [from Vegan Lunchbox Around the World — I wasn’t expecting to like this since Caribbean cuisine is out of my comfort zone, but it tasted so good. Only issue was the recipe called for white rice, but I used brown and didn’t take into account different cooking times. So the rice was a little underdone, but the flavor was yummo!) and plantains with cinnamon and sugar.

[Fri] Whole wheat challah, baked potato and greens soup (from Veganomicon — so hearty and so delicious!) and for dessert I made up some vanilla pudding, put it over graham crackers and sprinkled with chocolate chips (hardly healthy, but quite good and really simple)

[Mon] White bean aioli (Veganomicon) over roasted eggplant and quinoa

[Tues] Blueberry corn pancakes (Veganomicon)

[Wed] Spaghetti and lentil “meat”balls with homemade tomato sauce and roasted veg

[Thurs] Homemade pizza (My 12 year old nephew is coming over so I decided to have something that was a sure hit. The tomato sauce will be leftover from the night before, homemade pesto sauce for those who  prefer (aka me and Corey), plenty of fresh veg to put on as toppings plus cheese and homemade pizza dough)

[Fri] Whole wheat challah, winter lentil soup and black bean brownies
