Started meal planning for every meal (other than snacks which are usually just fruit, nuts/seeds, veg and/or hummus). So, here’s the menu for this week. If there’s no link, either it’s not really a recipe or it’s from Veganomicon.

B. Oatmeal with molasses, hemp oil (for the boys) and cinnamon.
L. Shabbat leftovers
D. Kovi’s first birthday party!

Trail mix (homemade granola, sunflower seeds, almonds and dark chocolate chunks), popcorn, bean and corn salad (made by my Mom), Asian salad (made by my Mom), veggies and hummus, water and vegan cupcakes with vegan “buttercream” frosting
[Monday]
B. Trail mix with coconut milk (for the boys)/almond milk (for me)
L. BBQ seitan (seitan and bbq sauce are both homemade) and sweet potato fries
D. Homemade refried beans and salsa on a corn tortilla
[Tuesday]
B. Autumn latkes and high protein quinoa almond berry salad
L. Chick pea cutlets and popcorn cauliflower
D. Avocado-lime black bean salad
[Wednesday]
B. Strawberry shortcake stacked pancakes and tofu scramble
L. Spaghetti and lentil meatballs with homemade tomato sauce (pureeing some spinach into it and thinly dicing some other veg in it with the hope that I can sneak some veggies into Asher…)
D. Avocado-lime black bean salad
[Thursday]
B. Blueberry pie chia pudding and carrot cake pancakes
L. Potato and kale enchiladas with roasted chili sauce
D. Red quinoa and black bean veg salad
[Friday]
B. Whole wheat bluebery breakfast muffins and fresh fruit
L. Creamy tomato barley risotto and veggie stirfry
D. Gazborscht, French bread and (store bought) sorbet
[Saturday]
B. Whole wheat blueberry breakfast muffins and fresh fruit
L. French bread, (store bought) sorbet, Southwestern corn pudding, black bean burgers (using chia + water in place of eggs) and guacamole
D. Leftovers from lunch
[Sunday] Rice and bean tacos
[Monday] Zucchini “pasta” with homemade tomato sauce and beanballs
[Tuesday] Messy rice and roasted veggies
[Wednesday] Buffalo cauliflower(for me and Corey), popcorn cauliflower (for the boys) and chick pea cutlets
[Thursday] Homemade refried beans and my made up salsa type thing on homemade tortillas
[Friday] Tomato-rice soup with roasted garlic and navy beans, vegan challah and fig smashed almond cookies
[Saturday] Vegan challah, enchilada casserole, green beans, roasted potatoes with rosemary and garlic, and almond cookies

Was looking through my old Hopefully Shrinking blog and it is amazing how far I have come. I have learned so much about health and proper eating since then. Can’t believe this whole road to health and veganism started with my body’s inability to properly digest an Oreo. Miracle in disguise…
