Starting a little late…
[Sunday] Rice & bean tacos
[Monday] Buffallo cauliflower (for me and Corey) and popcorn cauliflower and chummos (for Kovi and Asher — by calling it popcorn Asher scarfed down half the plate and wanted to save the rest for lunch tomorrow. Dinner is his smallest meal of the day, so it was no surprise that he couldn’t finish it)
[Tuesday] Homemade whole wheat pizza (vegan - Daiya - cheese with lots of veg and either homemade tomato or homemade pesto sauce.)
[Wednesday] Black bean burgers and kale chips
[Thursday] Carrot cakes pancakes and tofu scramble
[Friday] French bread (minus egg wash), Lucy’s vegetarian chili (using quinoa or maybe lentils instead of the fake meat) and chocolate covered popcorn
[Saturday] French bread, balsamic grilled summer veg with basil quinoa salad, salt and vinegar chick peas, lemon garlic pasta and chocolate covered popcorn
At the beginning of the summer I want to buy enough rice, beans, lentils, quinoa and nuts to last the whole summer. That way all we’ll need to buy throughout the summer is fresh fruit, veg, herbs. And if my garden goes as well as I’m hoping it will, may not even need to buy much fresh produce. I want to get a basket or something for my bike, put the boys in the trailer and go to the store. That way I will rarely have to use the van during the summer. That would be awesome.
I was sent this link. At first glance, I wasn’t so sure about it. Veggies, exercise and water… awesome. But veggies before breakfast?! Ugh… The more I thought about it though, the more I liked the idea. I’m a competitive person and when I see healthy challenges like this, it’s kind of hard for me to pass them up. So, starting tomorrow I’ll be eating 6 cups of veggies (plus all the other veggies I already eat), drinking 8 glasses of water (I probably don’t drink that much, so this is a good thing) and exercising for a half an hour a day (I definitely hit this number at least 3 days a week… now to make sure I’m reaching it the other 3-4 days of the week…).
This will be my first year with a real - as in, not on a balcony - garden. I plan on going all out. I found this site that explains when to start planting, etc in your area and looked through that to get an idea of what I could plant without driving myself crazy. I didn’t want to be planting everything at the same time and this site really helped me to figure out a schedule. Hopefully it’s accurate!
